Simple Cup Cakes
These are a family favourite, easy to make and you can't really go wrong with them...you can play around with toppings and add anything from chocolate, to buttercream, to simple lemon icing....give them a go and have fun!

Ingredients

125g margarine or butter
125g caster sugar
2 eggs, beaten
125g self-raising flour
2 tbsp milk
1 tsp vanilla extract
100g of chocolate

How to

1. Preheat the oven to 190°C/gas mark 5. Use a wooden spoon to cream the butter and sugar until light and fluffy.

2. Add the eggs a little at a time, beating well after each addition. Sieve the flour into the bowl and carefully fold in using a tablespoon.

3. Mix in the milk. Stir until the mixture is smooth and drops off the spoon easily. Divide the mixture between the paper cases (in the tin).

4. Bake in the oven for 15-20 minutes until the cakes are risen and golden brown. Remove from the oven and put on a cooling rack.

5. Melt 100g of chocolate, spoon onto the cakes. Spread to the case edges with the back of a teaspoon. Use your imagination to decorate!
