Plain Scones
The humble scone, I like to make a batch of these and throw some in the freezer, you can then take out defrost in the microwave and enjoy with a cuppa any day of the week!

Makes 10-12 | Prep 10 mins | Cooking time 10/12 mins

Ingredients

450g plain flour, plus extra for dusting
½ tsp salt
2 tsp baking powder
55g butter
2 tbsp caster sugar
250 ml milk
3 tbsp milk, for glazing
strawberry jam and cream, to serve

How to
​
1 Preheat the oven to 220°C/425°F/Gas Mark 7.
​
2 Sift the flour, salt and baking powder into a bowl. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar.

3 Make a well in the centre and pour in the milk. Stir in using a palette knife and make a soft dough.
​
4 Turn the mixture onto a floured surface and lightly flatten the dough until it is of an even thickness, about 1 cm or 1/2 inch. Don't be heavy-handed, scones need a light touch.

5 Use a 6-cm/ 1/2-inch pastry cutter to cut out the scones and place on the baking tray.
​
6 Glaze with a little milk and bake for 10-12 minutes, until golden and well risen.
​
7 Cool on a wire rack and serve freshly baked with strawberry jam and clotted cream.
