Brown Bread
Super accompaniment for any lunch

Makes 1 loaf | Prep 10 mins | Cooking time 1 hour 20 mins

Ingredients

2 tsp Bread Soda
2 large Eggs
50g Plain Flour
50g Porridge Oats
500ml Buttermilk
1 pinch Salt
1 tsp Sunflower Oil
350g Wholemeal Flour

How to
​
1 Preheat the oven to 170C/325F/Gas Mark 3.
2 Put all the flours, bread soda (sieved), salt and porridge oats into a mixing bowl and mix well.
3 In a separate bowl, beat the eggs together with the oil and add to the dry mixture.
4 Mix in the buttermilk and get the mix to a “sloppy” consistency.
4 Pour into a 2lb loaf tin. Sprinkle some mixed seeds on top and bake in the oven for 1 hour. Remove the bread from the tin and return to the oven to bake for a further 20 minutes.
5 Remove from the oven and allow the bread to cool down on a wire rack.
