Flapjack Cookies
This is such a versatile recipe that can be made and eaten any time of day. You can add nuts/chocolate/dried fruit to suit the mood!

Ingredients
150g butter
150g self raising flour
150g porridge oats
50g mixed nuts
100g brown sugar
3 tbsp honey
4 tbsp milk

Optional
100g of chocolate chips
handful of mixed nuts

How to
​
1 Preheat the oven to 160ËšC. Line 2 baking tray's with parchment paper.
2 Melt the butter with the honey until just warm and set aside.

3 Combine the dry ingredients (flour, porridge, mixed nuts, chocolate chips and sugar.
​
4 Add the melted butter and milk to create a soft mixture.
​
5 With a tablespoon, dot the mixture onto the prepared trays allowing enough room for the cookies to spread.

6 Pop in the oven and bake for 15 minutes.
7 Remove from the oven and leave cool for a few minutes until settled.
