Lemon Cheese Cake

One of my absolute favourite desserts...this is a no cook, no fuss, super simple and so tasty!! always a favourite for family gatherings! Don't be afraid to play around with different flavours and colours!

Makes 8 | Prep 10 mins | Cooking time: chill overnight

Ingredients

​

300g digestive biscuits
150g margarine
1 lemon
400g cream cheese
150ml double cream
100g caster sugar

How to

​

1. Crumb biscuits in blender, or place in plastic bag and crush with a rolling pin.

       
2. Melt margarine in saucepan, stir in biscuit crumbs. Use to line base and sides of 20 cm (8") flan case or shallow dish. Chill.  

     
3. Wash and dry lemon. Cut 2 slices from centre of lemon for garnish, grate rind and squeeze juice.        
4. Cream cheese with sugar in a bowl. Stir in lemon rind and half the juice. Whip cream until thick and fold into mixture. (Reserve enough for decoration.)      

 
5. Spread mixture over crumbs and chill before serving.  

     
6. Decorate with whipped cream and twists of lemon.
